Irish Tea Bread

12 tablespoon strong tea
1 lb mixed dried fruit
6 oz soft brown sugar
1 egg, lightly beaten
1 oz butter (melted)
9 oz all-purpose flour
1/2 teaspoon bicarbonate of soda

The mixed fruit can include raisins, currants, and any other kind of dried fruit you like; chop any larger pieces down to about raisin size. Place thetea, mixed fruit and sugar in a bowl; cover and leave overnight. Stir in the egg and melted butter. Sieve the flour and the bicarb together and foldthem in. Line the bottom of a large loaf pan with baking parchment, and brush the whole inside of the pan with melted butter. Pour the mixture in and smooth the top. Bake in a preheated oven (360 F) on the middle shelf for 1 1/2 hours. After removing from the oven, leave in the pan for 2-3 minutes; then turn out of pan and cool on a wire rack.

Irish Farmhouse Loaf

8 oz flour
4 oz sugar
8 oz mixed dried fruit
1/2 each grated rind of a lemon
2 tablespoon butter
1/2 teaspoon salt
2 teaspoon baking powder
1 pinch baking soda
1 each egg, beaten
1 1/4 cup buttermilk

Mix the flour, sugar, fruit, lemon rind, butter, baking powder and soda. Add the beaten egg and the buttermilk to make a nice soft dough; beat well and pour into a greased 2-pound loaf pan. Bake at 300 F for 1 hour, or until it tests done with a skewer.

Irish Soda Bread

3 cup flour
1 cup raisins
1/2 cup sugar
1 egg
2 teaspoon baking soda
2 tablespoon oil
1 1/2 teaspoon caraway seed
1 1/2 cup buttermilk

Grease a round cake pan, press bread evenly into pan to fill pan. Dough is a little sticky. With we knife, cut a large X across the whole top of the bread. Bake at 350 for 40-45 minutes.

Irish Bread

1/4 lb butter
2 1/2 teaspoon baking powder
1/2 cup sugar
1/4 teaspoon salt
2 eggs
1 cup milk
2 1/2 cup flour
1 cup raisins

Cream butter and sugar. Mix flour, salt, baking powder, and add to butter mixture alternately with milk. Add raisins. Pour into 8" X 8" pan. Bake at 350 degrees one hour.

Salt Rising Bread

3 medium sized potatoes
1 teaspoon sugar
4 cup boiling water
3 tablespoon cornmeal
1 teaspoon salt
:dough:
2 cup lukewarm milk
1/8 teaspoon baking soda
1 cup water
2 tablespoon melted shortening
1/8 teaspoon salt
1 flour

Pare and slice potatoes. Add cornmeal, sugar, 1 teaspoon salt, and boiling water. Wrap bowl in a heavy cloth. Cover and allow to stand in a warm place overnight. In the morning remove potatoes. Add milk, water, baking soda, salt, and shortening. Add sufficient flour to make a dough just stiff enough to knead. Knead until smooth and elastic. Form into loaves. Place in well-oiled pans. Cover and let rise until double in bulk. Bake in moderate oven (400ø F) about 45 minutes. 3 loaves.

Alicia's Flour Tortilla

4 cup flour
2 tablespoon lard
1/2 cup warm milk
1 tablespoon baking powder
1 teaspoon salt

Mix all dry ingredients and sift. Mix in lard. Add milk gradually. Knead til smooth. Roll in pieces. roll out flat very thin. Cook on griddle until lightly spotted.

Sada Naan

4 cup flour, all purpose; 450 g
5/8 cup milk; or warm water; 150 ml
2 tablespoon yogurt
1 tablespoon yeast,dried
1 teaspoon sugar
3 tablespoon ghee; or butter
2 tablespoon poppy seeds
1 tablespoon sesame seeds
----VARIATION: BADAMI NAAN----
2 cup almonds; blanched finely & shredded
1 white sesame seeds

Sprinkle yeast and sugar into the hot milk or water, leave it for 20 minutes. Sift together flour, dalt in a large bowl, and make a well in the centre. Put yogurt and 2 tbsp butter in the yeast mixture. Knead well and leave it aside for 3-4 hours, in a warm place until doubled in size. Punch down dough and divide into 8 balls. Let it rest for 10 minutes. Roll out each ball in the shape of traignles or make a round disk. then pull on one side to make a teardrop shape. Mix together 1 tsp ghee or butter, poppy seeds and sesame seeds. Spread a little of the above mixture on each naan. Place them on a baking tray. Cook in a preheated oven (375F/ 190C/ gas mark 5) for 4-5 minutes until brown specks appear. If the naan is not brown enough then put under a preheated grill for a minute or two. VARIATION: BADAMI NAAN Brush each sada naan with oil or butter before baking them. Sprinkle almonds and white sesame seeds on the greased side of every naan. Cook in a preheated oven, for 4-5 minutes. Makes 8 Naan
