Passover Hermit Cookies

12 oz pkg honey cake mix
1 tblsp instant coffee
1 large egg
2 tblsp oil
1 cup walnuts; chopped
1 cup raisins

Stir coffee into cake mix. Break egg into measuring cup. Add oil and liquid to measure 1/2 Cup Mix as directed on pkg. Fold in raisins and nuts. Chill in refridge at least 1 hour. Drop by tsp onto greased cookie sheet. Bake 15 minutes at 300°F. Makes 3 dozen

Cinnamon Spice Cookies

1 lb honey
1 1/2 cup sugar
3 eggs; beaten
2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon cloves
1 pinch ea nutmeg, coriander,ginger
1 pinch ea allspice, cardamom
1 teaspoon pepper, white
6 2/3 cup flour

----Frosting----

1 cup sugar, powdered; sifted
3 1/2 tablespoon water

To make cookie dough, warm honey over low heat until liquid; pour into a large bowl. Stir in sugar, eggs, baking soda, and spices. Mix in flour gradually. Knead thoroughly to make a dough. Preheat oven to 375°F. Grease baking sheets. Form dough into small balls about 1 inch across; place on greased baking sheets. Bake 10 to 15 minutes or until golden brown. Cool on a rack.. To make frosting, blend powdered sugar and water in a small saucepan. Bring to a boil, stirring constantly. Coat cookies with hot frosting.

Cream Cheese Cookies

1 1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup butter
3 oz cream cheese
1 cup sugar
1 egg yolk
1 teaspoon vanilla

Cream butter and cream cheese. Add sugar slowly, then add egg yolk. Add dry ingredients and vanilla. Roll in small balls. Dip fork in flour (so it won't stick) and press fork crosswise on top of dough. Bake at 350°F for 12-15 minutes. Use red and green sugar sprinkles on top before baking, if desired. These cookies stay soft.

M&M's Merry Meringue Snow Mounds

1 cup sugar
4 egg whites
4 feet parchment paper
1 pkg (16 oz) M&M's Milk Chocolate Candies for the Holidays

Preheat ove to 250°F.
Combine sugar and egg whites.
Using an electric mixer, fitted with a whip attachment, beat until stiff peaks form.
Spoon mounds of the mixture onto two cookie sheets lined with parchment paper.
Sprinkle M&M's onto the mounds.
Bake at 250°F for about an hour. Test by turning over and tapping the bottoms, they should be hard and sound hollow.

Cottage Cheese Cookies

1/2 cup butter or butter substitute
1 1/2 cup flour
2 teaspoon baking powder
1/2 cup cottage cheese
1/2 cup sugar
1/2 teaspoon salt

Cream butter and cheese until thoroughly blended. Sift flour, measure, and sift with sugar, baking powder, and salt. Add gradually to first mixture. Form into a loaf. Chill overnight. Slice thin. Place on slightly oiled baking sheet. Bake in moderate oven (400°F) 10 minutes, or until delicate brown. 40 servings.

Cranberry Drop Cookies

2/3 cup shortening
3/4 cup sugar
1 egg
2 cup flour
1/2 tsp soda
1/2 cup cranberry juice
1/2 cup cranberries; chopped
2 tsp grated orange rind
1/2 tsp baking powder
1/2 tsp salt

----Orange/Craneberry Butter Icing----

2 1/2 tblsp soft butter
1 1/2 cup sifted confectioners sugar
1 1/2 tsp cranberry cocktail
2 tblsp grated orange rind

Mix cookie ingredients. Drop on greased cookie sheet. Bake at 350°F for 9-12 minutes or til browned. Glaze with icing.
Icing: Mix all ingredients well and use as glaze on cranberry cookies

Soft Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg

Mix all ingredients and drop by teaspoonful onto ungreased cookie sheet. Press cookies out so that they are not completely flat, but they should still be slightly balled. Bake at 350°F for approximately 10 minutes (watch them!). Immediately press with a fork. Let cool on sheet a few minutes before removing.
