Beef Burgundy

2 slices bacon, chopped
2 lbs. sirloin tip or round steak, cut into 1 inch cubes
1/4 c. flour
1 tsp. salt
1/2 tsp. seasoned salt
1/4 tsp. marjoram
1/4 tsp. thyme
1/4 tsp. pepper
1 clove garlic, minced
1 beef bouillon cube, crushed
1 c. Burgundy wine
1/4 lb. fresh mushrooms, sliced
2 tbsp. cornstarch (optional)

In skillet, cook bacon several minutes. Remove and set aside. Coat beef with flour and brown on all sides in bacon mixture. Combine steak, bacon drippings, cooked bacon, seasonings, bouillon and Burgundy in pot. Cover and cook on low 6-8 hours. Turn on high. Add mushrooms; cook on high 15 minutes. To thicken sauce, add cornstarch (dissolved in 2 tablespoons cold water) with mushrooms. 6 servings.

Enchiladas

2 dozen tortillas
20 oz. can enchilada sauce
Onion
Olives
1 c. oil
Cheese
Chili con carne (optional)

Cut tortillas in squares. Put oil in deep pan, heat, add onions. Cook about 1 minute. Add tortillas. Pour in sauce. Add olives and onions, mix well. Pour in crock pot and heat through. About 1 hour on high. Add cheese to serve.

Venison or Elk Crockpot Casserole

Brown 2 pounds meat, cut in cubes.
Mix: 2 pkg. dry onion soup mix
1 1/2 cans evaporated milk

Put in crock pot. Cook for about 10 hours on low heat. Serve over rice, potatoes or noodles.

Pumpkin Tea Bread - Crockpot

1/2 c. oil
1/2 c. sugar
1/2 c. packed brown sugar
2 beaten eggs
1 (16 oz.) can solid pack pumpkin
1 1/2 c. sifted flour
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice or nutmeg
1 tsp. soda
1 c. chopped walnuts
1/2 c. cut up dates

Blend oil and both sugars. Stir in eggs and pumpkin. Add dry ingredients, mixing well. Stir in nuts and dates. Pour butter into greased and floured 2 lb. coffee tin. Place pan in crockpot. Cover top of can with eight paper towels. Place lid on top of crockpot and bake on high 2 1/2 to 3 1/2 hours.

Crockpot Oatmeal

2 c. milk
1/4 c. brown sugar
1 tbsp. melted butter
1/4 tsp. salt
1/2 tsp. cinnamon
1 c. rolled oats
1 c. chopped apple
1/2 c. raisins
1/2 c. chopped walnuts

Grease the inside of a slow cooker crockpot. Put ingredients into crockpot and mix with whisk. Cover. Just before going to bed, turn on the crockpot, at "low" speed. The cereal will be ready for morning. Serve with milk. Serves 4.

Hot Mulled Cider - Crockpot

1/2 c. brown sugar packed
2 qt. cider
1 tsp. whole allspice
1 1/2 tsp. whole cloves
2 sticks cinnamon
Orange slices

Put all ingredients in crockpot and cover cook on low for 2 to 8 hours. Spices may be taken out. Serve from crockpot with ladle.

Crockpot Cabbage Rolls

12 lg. cabbage leaves
1 lb. lean ground beef or lamb
1/2 c. cooked rice
1 (6 oz.) can tomato paste
3/4 c. water
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. leaf thyme
1/4 tsp. nutmeg
1/4 tsp. cinnamon

Wash cabbage leaves. Boil 4 cups water. Turn off heat. Soak leaves in water for 5 minutes. Remove, drain and cool. Combine ground meat; rice, salt, pepper, thyme, nutmeg and cinnamon. Place 2 tablespoons meat mixture on each leaf and roll firmly. Stack in electric slow cooker. Combine tomato paste and water; pour over stuffed cabbage. Cover. Cook on low setting for 8-10 hours.

7 Can Crockpot Soup

1 can stewed tomatoes
1 can tomato sauce
1 can sliced potatoes
1 can corn niblets
1 can peas
1 can cut-green beans
1 can turkey or chicken
Salt and Pepper to Taste

Add all ingredients, including liquid from cans, to crockpot. Cook on low 4-5 hours.

Notes: This is a great recipe to make when you want to serve something tasty and nutritious, but are short on time or money!

All Day Stew Pot

16 ounces beef stew meat, cubed
1/2 cup chopped onion
2 cups chopped carrots
1 1/2 cups chopped celery
4 cups diced raw potatoes
15 ounces canned beef broth
1 tablespoon parsley flakes
1/2 teaspoon Italian seasoning
1/8 teaspoon black pepper
2 tablespoons quick cooking tapioca

Brown the stew meat in a skillet. Place browned meat in bottom of crockpot. Stir in vegetables. Combine the broth, parsley, seasonings, and tapioca in a small bowl. Pour over mixture in crockpot. Cover; cook on low for 8-10 hours. Stir before serving.

Tortilla Casserole

1 1/2 lbs. ground beef
1 can Hunts special sauce
1 pkg. taco seasoning
1 chopped onion
1 sm. can green chiles
1 sm. can tomato sauce
1 pkg. flour tortillas

Brown ground beef and chopped onion in skillet. Add special sauce, tomato sauce, green chiles, and taco seasoning. Simmer for 5 minutes, then layer the flour tortillas, a layer of sauce until all is used in your crockpot that has been lined with aluminum foil.

Set crockpot on low and cook slowly 2 to 2 1/2 hours. Let sit a few minutes before serving. Cut into slices and top with a sauce as follows:

Sauce:
4 tblsp margarine
3 tblsp flour
2 to 2 1/2 c. milk

Melt the margarine in a pan. Add the flour and stir into a paste. Add the milk and stir until it begins to thicken. Then add 2 cups shredded cheese and 1 can of green chiles. If too thick, add a little more milk.
