Country Ribs and Sauerkraut (Crocked Ribs)

1 can or bag sauerkraut
1 onion
1 red skinned apple
Country ribs (pork)
1 c. beer
Drain sauerkraut. Put in bottom of crockpot. Add diced onion and chopped apple. Do not need to peel apple. Stir and even top. Layer country ribs on top of kraut mixture. Pour beer over and cover crock. Anywhere from 8 to 10 hours on low, and it smells wonderful.

Barbeque Roast Beef

1 (3 to 4 lb.) roast beef
1 (16 oz.) ketchup
1 c. Coke
1 pkg. onion soup mix

Cut up chunks of beef, put in crockpot. Add rest of ingredients. Cook 6 to 8 hours. Take meat out, tear with fork, put back into crockpot. Cook until hot.
Serve on hamburger buns.

Cowboy Soup

1 1/2 lbs. ground beef
1 green pepper
1 onion
1 can Rotel tomatoes with chilies
3 cans minestrone soup
1 soup can water
2 cans Ranch style beans
Salt and pepper

Brown ground beef, green pepper, onion. Dump everything in crockpot and cook for at least 4 hours.

Burgundy Beef Stew

2 lb. stew meat, cut into 1" cubes
6 carrots, 1" chunks
1 c. sliced celery
2 med. onions, cut up
1 tblsp brown sugar
1 tblsp salt
2 c. stewed tomatoes, drained
1 c. water chestnuts
3 tblsp tapioca
1 c. sliced mushrooms
5 potatoes, chunked
1 c. burgundy wine

In a large roaster, combine all ingredients except potatoes. Bake 4 hours, covered tightly, at 325 degrees. Add potatoes last hour of baking time. May also be made in a crockpot. Recipe serves 8 to 10 generously, easily made in multiples.

Hot Spiced Cider

4 cinnamon sticks, broken into pieces
2 nutmegs, broken
1 tsp whole cloves
1 tsp allspice (whole)
3 qt. cider

Wrap first 4 ingredients in cheesecloth and tie in a bundle. Simmer in crockpot 3 quarts of cider with spices 6-8 hours.

Italian Beef Stew

1 (30 oz.) jar Ragu spaghetti sauce
2 lbs. stew beef, cubed
5 carrots
1/2 c. water
6 med. potatoes
1 lg. onion
1 beef bouillon cube

Brown stew beef. Add sauce and bring to a boil. Cover and simmer one hour. Cut potatoes, onion and carrots into quarters. Dissolve beef bouillon cube in the 1/2 cup water; add this and vegetables to the stew. Cover and simmer approximately 45 minutes more. *Can also put all ingredients into a crockpot and cook all day on low. Serves 6.

One Pot Dinner

1 lb. ground beef
3/4 lb. bacon, cut in sm. pieces
1 c. chopped onion
2 (1 lb. 15 oz.) cans pork & beans
1 (1 lb.) can kidney beans, drained
1 (1 lb.) can butter Limas, drained
1 c. ketchup
1/4 c. brown sugar
1 tblsp liquid smoke
3 tblsp white vinegar
1 tsp salt
Dash of pepper

Brown ground beef, drain. Put in crockpot. Brown bacon and onions, drain. Add bacon, onions and remaining ingredients to crockpot. Stir well. Cover and cook on low 4 to 9 hours.

Rigatoni and Roast

1 (4 lb.) roast--any kind (rump roast preferred)
2 (8 oz.) cans tomato sauce
1 (8 oz.) can hot water
2 c. tomato juice
Nutmeg, salt, pepper
Paprika, cinnamon, allspice
2 (16 oz.) pkgs. rigatoni
Parmesan cheese
2 onions, chopped

Brown roast in a small amount of butter and oil. Add onions. Salt and pepper the roast while browning. Add tomato sauce, hot water, tomato juice and about 4 shakes each of nutmeg, salt, pepper, cinnamon, allspice and paprika. Put in crockpot and cook on low for at least 8 hours.
About 1/2 hour before serving, start preparing the rigatoni by boiling in hot water according to directions. Drain. Cut meat. Pour sauce over rigatoni. Sprinkle with Parmesan. Serves 6-8 people.

Cabbage and Potatoes

medium head of cabbage
6 -8 medium-sized potatoes
salt to taste
1 qt water or broth
pepper taste (optional)
1/2-1 tsp caraway seed (optional)
1/2 tsp fennel (optional)

Cut cabbage into 1-2 inch-wide wedges. Place in slow cooker.
Wash and quarter potatoes. Do not peel. Add to cabbage in slow cooker.
Add salt and mix well. Add optional pepper, caraway seed and fennel, mix well.
Cover. Cook on high 2 hours, and then low 6-8 hours, or until vegetables are tender.
Note: For variation, you can add 2 pounds of smoked sausage to slow cooker as well.

Slow Cooker Deviled Beef

2 lb lean beef -- in 1-inch cubes
1 envelope sloppy joe seasoning mix
6 oz tomato paste
1 c celery -- coarsely sliced
1 green pepper -- cut in squares
1/2 c water
2 tblsp vinegar

Place all ingredients in crockpot. Stir to mix. Cover and cook about 10 hours on low or 4 1/2 to 5 hours on high. Don't peek or stir till near the end of cooking time.
Serve beef with hot cooked noodles or rice.

Crock Pot Venison Stew

2 lb venison cubes
2 tblsp oil
3 stalks celery, diced
1/2 c chopped onion
2 cloves garlic, minced
1 tblsp parsley, chopped
1/2 c water
1/2 c dry red wine
1 c tomato sauce
salt and pepper to taste
oregano to taste
basil to taste

Brown meat in oil. Place celery and onion at the bottom of the crock pot. Add browned meat and remaining ingredients. Cook on low for 7-10 hours.
