Original Recipe:

Banana Nut Bread:

Favorite High Altitude Recipes by Hungarian All Purpose Flour; 1948

1/2 c sugar
1/2 c shortening
2 ripe bananas mashed well
3 tblsp milk
1/2 tsp salt
1/2 c chopped nuts
1 egg
2 c sifted flour
1 tsp baking soda

Mix and add ingredients in order given. Put in well greased loaf pan and bake 45 minutes at 350°F oven. Test with toothpick, put on rack to cool.

Now, when I started out doing this recipe I had every intention of following the recipe except for the nuts, because I knew we didn't have any. As it turns out nuts weren't the only thing we didn't have, I ran out of flour as well.
See, even an experienced cook gets the surprise in the kitchen as well. I was already committed to making the bread when I found out about the flour and I couldn't really stop so I decided on the wheat flour. In a perfect world, I would have used 1 1/2 cups regular flour and 1/2 cup of the wheat flour. But, it wasn't that perfect world so I made it with what I had and the wheat added as it was did make it have that floury taste, but after toasting the bread slices and putting butter on it, you don't notice.
Remember things can generally be saved if a mishape occurs, don't let a mistake ruin your meals or what your baking, learn from those minor setbacks and enjoy your time in the kitchen. And pay a little more attention to what is in your cabinets, I forgot we lost the flour during our recent move. Yes, the kitchen is still not organized. June 23, 2006
