Irish Sausage (prepared meat):
5 lb coarse ground pork butt
3 tsp basil
5 c bread crumbs
3 tsp rosemary
4 eggs, lightly beaten
3 tsp marjoram
8 cloves pressed garlic
3 tsp black pepper
1 tblsp salt
3 tsp thyme
2 c white wine

Combine all ingredients, mix well & stuff in sheep casing To cook, fry in butter or oil.

Italian Pepper Sausage (prepared meat):
6 lbs coarse ground pork
4 tsp fennel
2 tblsp crushed red pepper, dry
1 clove garlic
1/4 tsp thyme
1 onion, quartered
1/2 tsp bay leaf, crushed
1 1/2 tblsp fresh ground black pepper
1/4 tsp coriander
2 tblsp salt
1 c red wine
4 tblsp paprika

Combine all, mix well & stuff into hog casing Cook as you would others
