Pancake Mix

For Mix:
2 C dry buttermilk powder
8 C flour
2/3 C sugar
8 tsp. baking powder
4 tsp. baking soda
2 tsp. salt

To Make Pancakes:
1 egg
2 T vegetable oil
1 1/2 C pancake mix (see above)
1 C water (more as needed)

To Make Mix:
Sift all ingredients together. Store in an air tight container and use within 6 months of making.

To Make Pancakes with Mix:
Mix all ingredients until blended together and let the mixture stand for about five minutes.
Lightly oil a large griddle or skillet (preferably non-stick). Heat skillet over medium heat. You can tell if your skillet or griddle is hot enough by flicking a drop or two of water on its surface. The water should skitter around and quickly evaporate if the pan is hot enough.
Spoon batter into hot oiled skillet, allowing about 3 tablespoons per pancake. Cook pancakes for about 1 1/2 - 2 minutes. You will know your pancakes are ready to be turned over when large bubbles form on the uncooked surface (see photo). Flip pancakes and cook for about 1 1/2 minutes on the other side. Serve immediately or keep warm on a baking sheet in a 200°F oven until all pancakes are cooked.

Apple Pancakes

2 large apples
pancake mix
syrup

Mix up your batch of pancake mix according to the directions (I make mine on the thin side) and prepare as usual. Slice and peel an apple and place a few thin slices on the griddle. Pour 1/4 cup batter over slice. Cook on the first side until it starts to bubble on top, then flip and brown the other side. Serve with syrup. Note: You can also sprinkle cinnamon sugar over the apples if you wish.

Napoleon Burgers

1 can tomato sauce
1 can mushrooms
pinch garlic
pinch salt and pepper
pinch sugar

Add together and warm. Mix 1/3 of sauce with hamburger and make into patties. Broil patties till done, top with 1 slice mozzarella cheese and 1 slice onion. Broil till cheese is melted. Place on onion roll, top with additional tomato mixture and serve.

Poor Camper Steak and Potato Dinner

1 lb. Ground beef
4-5 Large potatoes sliced
2 cans Cream of mushroom soup
1 onion slices.

Make foil pouches, about 6"x6". Divide and press hamburger into 4 patties. Place hamburger patty in the bag, add 1/4 of potato slices and onions. Pour 1/4 of soup in bag and seal tightly. Cook on grill about 45 minutes or until done. turning about every 10 minutes. Cut open down the center and eat from the foil. Wonderful!

Toast N Hens

Heat a flat rock in the fire, fry 2 slices of bacon on the rock to grease up the rock, then dip a slice of bread in egg and lay it across the crispy bacon ( the bacon should bake onto that side) brown both sides of the toast once toasty lay the bacon side back down on the hot rock, using your knife cut out a small hole in the middle of the toasted bread to form a well try not to slice through the bacon, in this well break an egg into it and fry the egg till you like it done, butter the top and add salt n pepper serve with warm maple syrup eat it right off the rock no messy plates to clean up Enjoy adding your own variations.

RV Bean Burgers

1 c white or pinto beans cooked
3/4 c dry bread crumbs
1 egg
1/4 c diced onions
2-3 cloves diced garlic
1/4 c diced peppers (green or red)
1/4 tsp diced hot pepper (optional)
1/2 tsp Lea & Perrins
1/2 tsp salt
pepper to taste
1 tbsp Soya sauce (optional)
4 cheese slices (optional)

Chop or mash beans. Braise garlic, onions and peppers, mix with beans, add bread crumbs, mix well. Add other ingredients except cheese. Make into 4 patties. Lightly coat with flour if patties are too sticky. Fry in 1 tablespoon cooking oil (olive, corn, cannola). Add cheese slice after final turning and make into burger.

Tips:

When you have your outside carpet down and your lawn chairs can’t keep your carpet from blowing, try putting a nail though a large mouth sealer lid and hammering into the ground at the corners and one in the middle of the carpet. Just remember to remove the nails or the next person could get a flat.

During nite time and sleep hours know where your flashlights are.

Take Yatzee, UNO, Phase 5, Train, Cards and Games to play after things have calmed down from the day or something to do when it rains. Something for the whole family, something for kids and something for grown-ups.

RV Potato Pie

Pastry for a 2 crust pie
3 eggs
5 or 6 baking potatoes
1 cup milk
4 chopped green onions
1 tsp. salt
4 slices of bacon diced into 1/2 inch pieces
1/2 tsp. pepper
2 Tbsp diced parsley
(1/2 cup ham can be used in place of bacon )

Line pie plate with crust.
Peel the potatoes, slice thinly.
Arrange potatoes, bacon and onions in layers on bottom crust.
In small bowl, beat eggs, add salt and pepper, add cup of milk, pour mixture over potatoes, add more milk if needed to just about cover potatoes.
Sprinkle parsley over mixtures.
Cover with top crust.
Cut vents to let steam escape.
Bake at 375°F for 45 to 50 minutes or until golden brown and potatoes are cooked.
Can be eaten hot or cold. Enjoy

RV Greek Potato Salad

Take about 1 lb. new white potato nuggets and cook with skins on.
While potatoes are cooking, place 2 tablespoons light olive oil in heavy saucepan.
Dice 1 garlic clove finely and add 2 teaspoons vinegar.
Bring to boil, turn off heat when mixture boils.
Add 1/4 teaspoon rosemary, 1/4 teaspoon sweet basil and a sprinkle of ground oregano, dash of salt and pepper.
When potatoes are cool and firm cut into 1/2 inch pieces, pour and lightly toss sauce mixture over potatoes. Cool in fridge about 2 hours.
Garnish with hard cooked eggs cut into boats, plus sprigs of parsley.

RV Lower Fat Potato Salad

2-3 baker sized potatoes - (about 2 cups cooked & diced 1/2 inch)
2 raw shredded carrots - (about 1/4 cup)
4-6 raw radish shredded
3-4 green onions diced
1/2 green pepper & 1/2 red pepper diced (optional)
1/2 cup low fat mayonnaise
1/2 cup low fat plain yogurt
3-4 drops yellow coloring
Salt and pepper to taste
Mix all ingredients and chill 1-2 hours.
Enjoy!

RV Baked Lasagna

1 lb. lasagna noodles, uncooked
1 1/2 lbs. ground beef
Ricotta cheese
1/2 cup Parmesan cheese
1 1/2 qt. Spaghetti sauce
2 med. Cans drained mushrooms

Crumble and sauté ground beef. Mix in mushrooms. Using a 9" x 13" pan, cover bottom of pan with thin layer of sauce, then a layer of uncooked noodles, layer of ricotta cheese, layer of ground beef and then cover with some of the sauce. Repeat each layer, covering the last layer with sauce. Store in refrigerator overnight. Bake at 350° for 1 hr., covered with foil. Remove foil and top with Parmesan cheese. Place back in oven until cheese is melted. Cool about 15 min. before serving.
Make approx 2 lbs.
