Tobuli Salad

1 c. crushed wheat
1 1/2 bunches chopped parsley
3/4 c. fresh mint, chopped
1 bunch green onions, chopped
1/2 head lettuce, shredded
2 tomatoes, chopped

Soak bulgar for 1 hour; drain and add chopped vegetables then add dressing.
Dressing:

1/4 c. olive oil
Juice of 2 lemons
1/2 tsp. salt
Dash of pepper

Let stand 3 to 4 hours before serving chilled.

Cabbage Almond Sensation Salad

1 head cabbage
8 tblsp slivered almonds
2 pkg raman noodles
8 tblsp sesame seeds
4 green onions; chopped

Chop cabbage. Brown in oven, almonds and sesame seeds. (Do separate.) Break up noodles. Add the above together in a salad bowl.
DRESSING: 4 tbsp. sugar 1 tsp. pepper 2 tsp. Accent salt 2 tsp. salt, 6 tbsp. rice vinegar 1/2 c. oil. Mix all ingredients but the oil together. Dissolve sugar, salt by stirring, or microwave. Then add oil. Mix together.
When ready to serve, add dressing to cabbage mix and stir well. (Optional - add chopped chicken or turkey.)

Strawberry-Poppy Seed Salad

1/3 cup Vegetable oil
3 tbsp Cider vinegar
2 tbsp Water
1 1/2 tbsp Honey
1 tbsp Poppy seeds
1/2 tbsp Salt
1/2 tsp Paprika
1/4 tsp Pepper
1 pint Basket fresh California strawberries, stemmed and halved
1 small Red onion, sliced and separated into rings

In electric blender, combine oil, vinegar, water, honey, poppy seeds, salt, paprika and pepper. Blend until thoroughly mixed; set aside.
To assemble salads, line four individual serving plates with lettuce.
Arrange strawberries and onion rings, equally divided, on lettuce.
Stir dressing before serving; pass separately.

Enoki Spinach Salad

1 lb fresh spinach
4 oz toasted almonds
1 can (15-oz) mandarin oranges
1 pkg enoki mushrooms

Dressing:

5 oz olive oil
2 oz balsamic vinegar
1 tablespoon dijon mustard
2 tablespoon chopped chives
2 tablespoon sugar

Wash & dry spinach; tear into bite sized pcs. Place in salad bowl. Add toasted almonds and mandarin oranges and toss well. Ligthly wash mushrooms and cut off ends where stems start to separate. Spread mushrooms over top of salad.
Blend together the dressing ingredients. Adjust to taste. Pour over salad and serve.
