Old Fashioned Loaf (cooked meat specialty):
Made of carefully selected lean pork with enough beef to add flavor
and firmness of texture to the loaf.
Olive Loaf (cooked meat specialty):
Blend of lean pork and beef chopped to a fine texture, seasoned and
mixed with whole, stuffed olives.
Oyster Sausage:
2 lb oysters; shucked and drained (reserve liquid)
1 clove garlic; finely minced
1 tsp freshly ground black pepper
1 egg; beaten
1/4 c parsley; chopped
2 c fresh bread crumbs
If using casings, prepare 4 feet (1 1/2 " diameter) hog casings by rinsing and soaking.
Put oysters in bowl of food processor; coarsely chop. Add remaining ingredients and process until blended. Add enough of reserved liquid to make a stiff paste. Stuff mix into casings and twist off into 3 " links.
These may be steamed, baked, or sauteed. Cover if baking.
